Vegetarian and vegan diets
Vegetarians need to make a little extra effort to ensure that their diet provides all the essential nutrients.
A variety of vegetarian diets have become more common due to, for example, ethical and ecological reasons. All those following vegetarian diets should ensure that they're getting enough calcium, vitamin D and vitamin B12 in particular. Vegans should also pay attention to the quality and quantity of their protein intake, and ensure they're getting enough energy. A safe vegetarian diet for children always contains dairy products.
Bread is a fundamental component of all vegetarian diets – an important and varied source of energy and nutrients. The albumin (protein) obtained from bread is even more important in vegetarian diets, which lack animal proteins. You'll get sufficient protein if you supplement a grain-based diet with legumes, seeds, nuts, and – possibly – milk.

When planning our vegetarian dishes, we now pay even closer attention to our customers' protein requirements. We use more beans, lentils, soya and tofu in both our warm meals and salad buffet.
