The fatty acid composition of cocoa butter

Of the fatty acids in cocoa butter, about 60% are saturated. These comprise approx. 60% stearic acid and approx. 40% palmitic acid.

About 35% of the fatty acids in cocoa butter are monounsaturated oleic acids.  The remaining 5% are polyunsaturated fatty acids, of which 60% is linolenic acid and 40% alpha-linolenic acid.
