Cured fish is a traditional item on the Christmas table. 

  • Prepare the fish well in advance. It takes about one day to cure a fish.
  • You can also place the fish in a freezer right after you have seasoned it. This can be done up to several weeks before Christmas. The fish is cured when it thaws in the refrigerator and is then ready to serve.
  • A cured fish keeps in the fridge 2–3 days.
